This oyster company started on the banks of the Rappahannock River. Merroir is their “tasting room”. Everything is either served raw or cooked on an outdoor grill, small-plate-style, and beautifully paired with craft brews and world-famous wines. Chesapeake Bay Oyster Company is a new restaurant in Urbanna, VA that started with an oyster farm. They serve their signature grown Parrot Island Oysters that are grown just at the mouth of the Rappahannock River where the salinity is between 12 and 18 ppt. The oysters have a mildly salty, slightly sweet taste that make them paradise found on the half shell and the perfect complement to any entree.
